Som tam :Tam bak hoong (Laotian /Isan), better known by its Thai name som tum or som tam  is a spicy papaya salad originating from Laos and the Isan region of northeastern Thailand . Bak houng  is the Lao/Isan word for papaya and tam  means 'pounded.' The Thai name literally means 'pounded sour.' Tam bak hoong is traditionally eaten with glutinous rice (Thai: ˹) as a meal, as a spicy vegetable accompaniment, or a snack by itself. The dish is served at room temperature, and often paired with pork rinds and raw vegetables and Ping Gai (Thai gay yang') or roast chicken.
Tom yum , also sometimes romanized as tom yam or dom yam) is a soup originating from Thailand . It is perhaps one of the most famous dishes in Thai cuisine .
Tom yum is characterized by its distinct hot and sour flavors, with fragrant herbs generously used. The basic broth is made of stock and fresh ingredients such as
lemon grass , kaffir lime leaves, galangal , shallots , lime juice, fish sauce , tamarind , and crushed chilis .
In Thailand, tom yum is usually made with
prawns (tom yum goong), chicken (tom yum gai), fish (tom yum pla), or mixed seafood (tom yum talay or tom yum po taek) and mushrooms - usually straw or oyster mushrooms. The soup is often topped with generous sprinkling of fresh chopped coriander (cilantro) leaves.
Pad Thai "Thai style frying" is a dish of stir-fried rice noodles with eggs , fish sauce juice, red chilli pepper , plus any combination of bean sprouts , shrimp , chicken , or tofu , garnished with crushed peanuts and coriander . It is normally served with a piece of lime , the juice of which can be added along with the usual Thai condiments . In Thailand, it is also served with a piece of banana flower .
Tom kha gai is a hot sweet soup made with coconut milk , lemon grass and chicken . The name literally translates to boiled galangal chicken . The fried chillies add a smoky flavor as well as texture, color and heat, but not so much that it overwhelms the soup.
